Leafy greens
Spinach, kale, collard greens, watercress, and other leafy greens are packed with vitamins and minerals, especially vitamin C, K, folate, and iron. The bad news is that many nutrients in the super healthy greens are water-soluble and get lost in when cooked.
Just one cup of raw leafy greens (pick your favorite) is enough to cover your daily dietary needs for most essential vitamins. If cooked, you must eat quite more than that.
