Olive oil, the heart of the Mediterranean diet, is all healthy monounsaturated fat in the form of oleic acid, a powerful antioxidant, and anti-inflammatory.
Cold-pressed, extra-virgin olive oil is much better raw than cooked. Still, olive oil is one of the strongest alternatives to cook with, and far healthier than grain-based oils. Although perfectly safe and nutritious, heated olive oil is less healthy than when consumed raw.
