You’re not matching the flavors
Not all marinades are created equal if you’re adding a splash of soy sauce, you better have an Asian-inspired menu in your head. Vinegar or citrus juice? Black pepper or cumin?
Think of the flavor combinations and the meal as a whole. Marinating meat is not about bathing your meat with everything in your fridge; every ingredient should have a purpose.
Sometimes less is more. A few well-thought spices, olive oil and an acidic ingredient are enough to make your meat shine.
