Your timing is all wrong
Marinating is all about adding flavor while tenderizing your meat. And every meat needs different times to soak it all in.
Fish, which needs no tenderizing, can benefit from brief marinades of between 15 minutes and half an hour.
Chicken might need between 30 minutes and up to six hours.
Red meat will be softer and well-seasoned when marinated for between four and twelve hours.
