Hibachi
Hibachi is the Japanese tradition of cooking food on a grill, often table-side. It’s your dinner, but also a show. Interestingly, the concept is not entirely Japanese but was invented in New York City by Rocky Aoki, founder of the Benihana restaurant.
The concept caught on and is now a Japanese staple, at least in the United States. There are many authentic grilled Japanese foods, that’s for sure, like the charcoal-grilled chicken yakitori skewers, but they don’t have the flair of a Hibachi table. That’s the American way.
