Lots of Beans
Beans travel well, too; you just have to boil them, and you’ve got yourself all the protein you need. That’s why cowboys had beans for dinner almost every day. Bean-based dishes, including chili, mashed beans and bean soup, were customary as well.
Inexpensive, nutritious and readily available, every cowboy carried its bag of beans. If they had the chance to hunt something, which was less common than you think, they’re throw it into the pot of beans to make a stew.
