A cowboy’s menu would be pretty straightforward, even dull, but they did enjoy some oddities. One of these strange dishes is pemmican. Imagine rendered animal fat or lard flavored with powdered dried meat, hardened into a quirky 1800s power bar with a coating texture and a meaty taste. That’s pemmican right there.
