You may think that egg substitutes are safer to leave in the fridge longer than actual hard-boiled eggs. The fact of the matter is, hard-boiled eggs, as long as they are in their shell and they are boiled long before their expiry dates. Even if they are boiled 3 weeks before their expiration dates, they can be left just before that time. But egg substitutes attract bacteria quickly so it is best not to eat a carton of eggwhites if it has been in the fridge for even a week.
